On Saturday 17th May 2025, let yourself be carried away by an exceptional sensory interlude during the oenological lunch, organized by Youri Greffe, head sommelier of the Michelin-starred restaurant Albert 1er.
On the occasion of this privileged event, meet a passionate winemaker for a moment of sharing and gastronomy.
We will have the honor of welcoming Séverine Granges, who will present her universe during a tasting followed by a gastronomic lunch in our starred restaurant.
Alongside Youri Greffe, she will make you discover her career, her passion for wine, and the specificities of her terroir. A moment rich in flavours, exchanges and discoveries around wine.

The Domaine de Beudon: The Vines in the Sky
For this next oenological lunch, we will have the pleasure of discovering the Domaine de Beudon, a truly extraordinary place located in Fully, Switzerland, on the right bank of the Rhône, between Martigny and Saillon.
Nicknamed Les Vignes dans le Ciel, this estate perched on the mountainside impresses with its spectacular location. Its main vineyard is located between 740 and 890 metres above sea level, on a south-facing plateau, accessible only on foot or by a small private cable car. This unique configuration offers optimal sunshine and exceptional biodiversity, between oaks, almond trees, chestnut trees and pines.
The estate extends over three levels: in the plain, apples, pears, medicinal herbs and vegetables are grown; on the hillside of Fully, a few vines are located at the foot of the hamlet of Beudon; Finally, at the very top, the heart of the wine estate unfolds.
The richness of the soils – on the border between crystalline massif and limestone – as well as the very varied microclimates promote a remarkable biodiversity. Beudon is also home to the greatest diversity of butterflies in all of Switzerland!
But what makes the Domaine de Beudon unique is also its strong commitment to viticulture that respects nature. Since the 1970s, the founders Marion and Jacques Granges have shaped this place with passion and high standards, choosing a demanding and respectful path: biodynamics. Since 1992, all the estate's crops have been managed according to these principles, without synthetic products, with a deep respect for nature and the living.
This approach makes it possible to produce authentic and expressive wines. The vinification is done without artifice: the yeasts used are indigenous, from the grapes themselves. The wines are unfiltered, are often lighter in alcohol, but offer a good balance, finesse and real ageing potential.
The Domaine de Beudon is therefore much more than a vineyard: it is a world suspended between heaven and earth, between tradition, innovation, and deep respect for the living.
We willhave the pleasure of welcoming Séverine Granges, who will come to present the wines of the estate herself. Daughter of Marion and Jacques, Séverine embodies the new generation of Domaine de Beudon. Discreet but committed, she continues with conviction the work of her parents, combining tradition, gentle innovation and ecological awareness.
Trained in the field for as long as she can remember, she knows every corner of the hanging vines, every plant on the estate, and every story behind a bottle. She perpetuates the pioneering and idealistic spirit of the Beudon estate, with sensitivity and high standards.

Meet at Le Fenil at 10:30 am for a guided wine tasting, a privileged moment of exchange with Séverine Granges, who will make you discover his vintages and his know-how. The morning will continue with a gourmet lunch at the Michelin-starred restaurant Albert 1er, where each dish prepared by our chef Damien Leveau will be thought out in perfect harmony with the selected wines, for an unforgettable taste experience.
